We haven’t looked at veggie meals for a while, but you should always be considering vegetarian meals, at least a little, because it’s not only better for your health but super keen for the planet as well. When I went mostly organic, I did almost lose my mind. Do you know how much organic food info is out there? All those books, all the darn studies, all the people in Humboldt talking in circles. It’s a problem.

This week I’m going to serve a series of posts about meatless meals. I’m not a vegetarian, but I am currently trying to eat more meatless meals. I don’t eat that much meat as is, but I have found myself struggling to come up with recipes that don’t focus on meat. And I get tired of chicken.
